Sugaar

The powerful and flamboyant spirit of Basque Country tradition meets French elegance and refinement in a whirlwind of simplicity and authenticity. Allowed by singular exceptional products and charcoal cooking and technique, these two spirits here find a unique and intimate fusion.

Philosophy

Hidden only a few steps from the fabled Boulevard Saint-Germain, Sugaar hosts its regulars and new faces upstairs. While the scarlet wine flows and conversations whisper, the clock almost shows midnight. The table linens that started off the evening dressed in white now show carmine shadows in the reflection of the candle-lit surfaces, ornated by the scintillating silverware. The atmosphere holds the well-lived spirit of audacity and sophistication.

THE MENU

From Cantarbia anchovies to Asturias sardines and Leone meats, Sugaar, led by insatiable curiosities, spent years traveling to the heart of the Basque Country identifying, tasting, and picking its products, all selected in the spirit of savoir-faire and admiration for each ingredient. At the center-piece of this selection lays the foundation of special encounters, relationships, and human touch.

THE WINES

Upon its first drop, it only takes one sip to be utterly surprised by these new savors and to be taken by a journey to Spain with extreme precision while discovering small producers with colossal wines.

DRINKS

In the midst of crystal glasses lay colorful liqueurs. The menu holds 12 signature cocktails paying homage to Anglo-Saxon culture and flair for precision, which consequently leaves glasses empty and hearts full.
